New to Joomla - basic question for drop down menu's

My apologies if this is really straightforward.

I started implementing CMS Made Simple (CMSMS) with drop down menu's for each page of my website.

However, I have since discovered this good looking package, and installed 1.6

I designed a template in Artisteer, and uploaded it. It has Horizonal drop down menu's shown in the Artisteer window, I don't want Vertical menu's at the side.

When I go in to the Admin of Joomla, I can't seem to find how to implement the drop downs.

Am I missing something obvious? Need an add-on?
When I preview my page I just get a Header and Footer
Any tips of a pointer to a tutorial would be very welcome.

Also, is there a page showing where the various sections of the Joomla templates are?
IE I inserted breadcrumbs to an area where I wasn't really sure where it was going to appear.
